Celebrate Bastille Day at Ici Urban Bistro
July 14, 2009 by: diningindcThe new Executive Chef, Chef Olivier Perret of Ici Urban Bistro who is a native of Burgundy, France, is creating a special French inspired three-course, $35 menu in celebration of France’s Indpendence Day.
Chef Perret’s special menu will include appetizer choices such as beef tartare with truffle mayonnaise and capers; a fish-and-shellfish stew; and a salad with lardon and poached eggs. His Bastille Day entrées are black-olive-glazed chicken breast with artichoke purée and cippolini onions or pan-seared baby calamari with a wild-rice medley.
Pastry Chef Beverly Bates who has crafted desserts at Citronelle Michel Richard and Bistro Bis, who is now at Ici Urban Bistro will offere a decadent chocolate bombe with raspberry and caramel sauces and a duo of tropical-fruit compote and crème brûlée.
The new Chef, Perret comes to the chic French restaurant by way of Café des Architectes, a modern French brasserie housed in the Water Tower neighborhood of Chicago. Prior he received training at the Ecole Hotelière Isle d’Abeau in Isère, France. He then honed his craft at the acclaimed Restaurant La Tassée in Lyon, France and later worked at French restaurants in Canada and the United States, including Restaurant Renoir at the Sofitel Montreal.
